Ordering like a local
Ask what's good, point, and say 我要 — 'I want.' Direct is polite at a Chinese table; nobody expects flowery sentences at a noodle shop.

Scan to order
Many places have no paper menu at all — you scan a QR code on the table and order by phone. Need a human? Call out 服务员 (fú wù yuán, 'server'); raising your voice a little is completely normal.
Not too spicy — needs and preferences
Sichuan-level spice is no joke, and kitchens are happy to adjust — if you speak up before the wok does.
